BANANA BLOSSOM BURGER WITH MALUNGGAY
1/2 Banana Blossom about 300g, shredded
1 bunch Malunggay leaves,
1 medium size Egg
1/2 cup All-purpose flour
1 medium size Red Onion, chopped
2-3 cloves Garlic, minced
1 tbsp light Soy sauce
1/2 tsp Sugar (optional)
Salt and Pepper to taste
1. For the banana blossom; peel off the outer leaves until you reach the part where the leaves are pale colored, start shredding here. Rinse the shredded blossom twice and then parboil for a couple of minutes to remove the sap. Rinse thoroughly, drain, and squeeze out excess water. Put in a mixing bowl.
2. Rinse and remove leaves from the stalk of malunggay then add to the blossom along with all of the remaining ingredients. Mix well. Form into balls and flatten to make patties.
3. Heat pan with oil. Place 3-4 patties at a time and cook each side until golden brown (about 5-7minutes). Drain on a paper towel. Serve with rice, on a bun or with choice of green salad.
